The Grand Palais isn’t just a backdrop for Thierry Marx. It’s a landmark, a foundational place. As a child, he would come to dream in front of the exhibitions, explore every corner of the Palais de la Découverte, and soak in that unique magic where knowledge meets beauty. His attachment to the place has never faded. It’s steeped in memory and emotion. „It’s where I learned,” he says, „that knowledge, like culture, is meant to be shared. Today, with the Réséda Café, I wanted to give something back to this place that gave me so much.
I offer a cuisine of transmission, rooted in the real, respectful of the seasons, of gestures, of places. A cuisine that is accessible, that excludes no one, and speaks to every kind of appetite. For me, there is no conflict between tradition and innovation. There a only bridges to be built. Réséda Café is one of those bridges. A space where we can come together, in all our diversity. “
For Thierry Marx’s new culinary adventure, nature sets the pace and the seasons call the shots: seasonal fruits and vegetables arrive freshly harvested and beautiful, straight from local producers. We forget the superfluous and celebrate the essential: flavour, authenticity, quality.
Each dish, as simple as it may seem, hides a real precision: balance, respect for the product… and a generous helping of pleasure. It’s local, plant-based, artisanal, but above all, deliciously authentic.
And since the Grand Palais is a place of culture and encounters, Thierry Marx adds his own touch: cuisine that brings people together, makes them feel good and gets them talking — all around a delicious meal. Réséda Café is much more than just a venue to eat: it’s a special moment, a tasty and responsible break to be enjoyed without moderation.
